'Winter in Sicily' Cooking Demonstration | Wednesday July 16th | With Rosa Malignaggi

Demonstrating the many and varied gastronomic delights of traditional Mediterranean cuisine with Rosa Malignaggi from Rosa’s Table.

Rosa’s parents Diego and Pina Mirabella were born in Calatafimi, Sicily. They were very generous in sharing their cooking, food traditions and stories with me. The seasonal recipes used in this demonstration have been inspired by some of their favourite family dishes as well as Rosa’s recent culinary tour to Sicily.

Come and be a part of these food experiences and take away with you a piece of history and culture to inspire you and your cooking.

  • Upon Arrival

    Freshly brewed coffee or tea

    Sicilian herb and gorgonzola bread with Jennie’s stewed quinces


    l ’antipasto

    Sicilian winter citrus salad
    Rosa’s nonna’s cauliflower fritters

    Roasted tomatoes with Jennie’s homemade pesto


    il Primo Piatto

    Rosa’s mother’s ricotta, silver beet and spinach filled pasta shells with Napoli sauce.

    Wine: A Sicilian Pinot Grigio


    il Secondo Piatto

    Sicilian fennel scented osso bucco with Rosa’s mother’s seasoned crusty bread

    Wine: A Sicilian Nero d’avola

    il Dolce

    Chocolate, almond and Sicilian blood orange liqueur cake

  • 10:30 – 3:30 (approx)

    Please arrive at  between 10:00 – 10:15 for meet and greet, morning coffee and readiness for a sharp start at 10:30.

  • No experience necessary.

    “To gather around a table with my Sicilian family is an adventure jam packed with frivolity, grace and really, really good food. My grandmother, the matriarch of the family was a robust yet calming woman who left her legacy of wholesome, rustic Sicilian cooking with her daughter and 7 daughters-in-law. One of these was my mother Pina married to my father Diego and together they created their own table which was never short of magical morsels of pasta, eggplants, tomatoes, tuna, parmigiano cheese and mortadella!

    Hence it certainly did not surprise my husband Michael when I announced one day that I wanted to create my very own table for people to gather around and listen to the stories of my grandparents, parents and family history. This is how Rosa’s Table began, a monthly get together with the usual suspects flocking to my home to learn about my Nonna’s fish soup with the fish that got away or my auntie Vitina’s pork and fennel sausages made traditionally at Easter time. For me these have been an escape and an opportunity to unlock my little treasure box of culinary delights.”

Occasionally, workshops may need to be cancelled or rescheduled due to unforeseen circumstances. In such cases, you’ll be offered the option to transfer your booking to a new date (if available) or receive a full refund.

If,  for whatever reason you are unable to attend please advise for alternative arrangements. The small class offered on this day is dependent on the confirmed numbers as I am sure you will appreciate. Together,  every endeavour will be made to fill your place and have refund offered.
