Join acclaimed pastry chef, author, television judge and flavour-obsessed craftsman Darren Purchese for an immersive deep-dive into one of the great foundations of patisserie: puff pastry.

In this intimate Marthadale workshop, Darren will demystify the process of making exceptional puff pastry from scratch. You’ll learn the science behind lamination, how to work dough for perfect lift and texture, and how to transform those golden layers into elegant sweet and savoury creations. Expect a demonstration-style class with a little hands-on — ideal for curious home bakers, seasoned cooks wanting to finesse their pastry game, or anyone who simply loves buttery, flaky perfection.

Darren will showcase a selection of dishes inspired by seasonal produce from the Marthadale kitchen garden and the surrounding Bellarine Peninsula, highlighting how great ingredients and proper technique elevate each other.

  • An inspiring, technique-rich, 3.5-hour masterclass with Darren Purchese

    Arrive at Marthadale for ‘meet and greet’ and a settling morning coffee at 10:15 for prompt start at 10:30

    Intimate class size of 12 only to ensure a focused, interactive learning experience.

    Shared seating arrangements in relaxed observant area.

    Demonstration Class with light hands-on experience offered.

    Tastings throughout the demonstration.

    Please arrive at  between 10:00 – 10:15 for meet and greet, morning coffee and readiness for a sharp start at 10:30.

As a judge on The Great Australian Bake Off, he’s guided and mentored bakers across the country, bringing clarity, calm and expertise to even the most intimidating techniques.

    Please bring an apron as some light hands-on work will be on offer.
